Pear Crisp

I developed this recipe when we had a craving for pear pie, but I was too busy that day to take the 
time to make a pie crust.  This fit the bill!  It is fast, easy and really tasty.  I like to use bartlett pears because they are so nice and juicy.  If you use a less juicy pear, you may want to use a little less cornstarch in the filling.

Ingredients

Filling:

  • 4-5 ripe pears
  • Juice from one lemon
  • 2 T cornstarch
  • 1 tspn dried ginger
  • 1 tspn cinnamon
  • 2 T brown sugar  
Topping:
  • 1 tsp cinnamon
  • 2/3 cup almonds, pecans OR walnuts (use what you like)
  • ½ cup raisins
  • ½ cup rolled oats
  •  2 T brown sugar
  • 1 TBS honey
  • 2-3 T Earth Balance

Preparation

      1. Preheat oven to 350.
      2. Cut pears into quarters, cut out core and slice ¼ inch thick. 
      3. Toss pears with lemon juice, cornstarch, ginger, cinnamon and brown sugar.  Place in 8x8 baking dish.
      4. For the topping, place the nuts, oats and raisins in the bowl of a food processor. Pulse until well ground and mixed. Then add brown sugar, honey and Earth Balance.  Pulse only till  crumbled.
      5. Cover pears with the topping.. Bake for about 35 minutes until pears are bubbling.
